I've been spending way too much time lately on Pinterest. I was inspired to make a recipe for Peppermint Cookies & Cream Popcorn that I found and pinned. It looks delicious and I made some to take to the neighbor's house tonight. However, I also had Golden Oreos in my pantry and started thinking about those who don't like mint...mainly my son who was really disgusted I was mixing his favorite cookies with dreaded the dreaded mint flavor. So after a quick peek in the pantry I came up with this combination. I'm warning you it's definitely for those with a sweet tooth! Next time I make it I may throw in some peanuts or other salty nuts to play up the salty/sweet combination even more. The results are delicious!
Ingredients:
1 1/2 bags of popped microwave popcorn
1 package almond bark
1/2 of a package of Golden Oreos (crushed)
1/2 cup of toffee bits
Cookie Sheet
Parchment or Waxed Paper
Directions
Pop popcorn according to package directions. While the popcorn pops put the oreos in a ziploc bag and go to town with a rolling pin or other heavy object. (It's always a good stress reliever)
I wanted my cookies to be pretty small but to still be identifiable as a cookie. Pour the popcorn into a large bowl.
Pour the crushed cookies and toffee bits on top of the popcorn. In a microwave safe measuring cup or bowl melt the almond bark until smooth and melted. (It took me about 2 minutes on high)
Pour the melted almond bark over the contents of your bowl and stir until all pieces are coated. Pour onto a cookie sheet covered with parchment or wax paper.
Cool and allow almond bark to harden. Store in an airtight container.
